Green Bean Casserole

Author: Jane Waks
Serves 6

1 to 1.5 lb fresh green beans 1 can cream of mushroom soup
3/4 cup milk 1 can french fried onions

Trim the beans, and boil or steam briefly until tender but not fully cooked.
Stir together the condensed soup and the milk in a casserole, and add the beans.
Add half the french fried onions and stir.
Bake at 350 degrees, about 25 minutes.
Sprinkle the rest of the onions on top, and return to the oven for another 5 minutes.

Notes and Variations

Low fat cream of mushroom soup, and reduced fat milk are fine.  Original recipe published by Campbell's Soup and French's Onions calls for salt and/or soy sauce, but I omit them.

Original also calls for frozen beans, but it is better with fresh.

Someone on the SCA-Cooks list uses extra-sharp cheddar cheese in the topping.  (try this)

Tried adding some sliced mushrooms last time; this worked okay.
